Stress Test and Beef Bourguignon

Yesterday I had a stress test and echo cardiogram (sp?), it was so much fun.  First they injected me with radio active dye and made me wait for 1/2 an hour, then onto this table to lay with my arms over my head for 1/2 hour while this weird camera circled me and took pictures of my glowing heart.   Normally this would not bother me one bit but I shoveled huge amounts the day before and holding them in this position caused a good deal of pain and cramping.  Next it was onto the tread mill for a little fast walking.  I got out of breath and they kept yelling don't close your eyes, don't run walk fast, I think this is to add more stress to the stress test.  In any case I had an anxiety attack right on the spot, for those of you that don't have panic attacks, most of the time you have no clue what brings them on, which makes them lots of fun too.  I have little pills the Dr. gave me to take when I have a panic attack, but they calm me down and the white coats around me really wanted me to be stressed.  After this fun it was onto the echo, which is just an ultra sound of your heart no big deal.  The woman who did this test, did the same test on me back in 2008.  She went to high school with Joe's oldest brother and remembered asking me back in 2008 about Fred.  (I believe she may have been in love with him, she told me how good looking he was and he ran track, they went on one date etc.) She remembered asking me because the last name is unusual and there are so few of us, what she didn't remember was me telling her that Fred died of a heart attack a few years prior.  So she got to relive that pain again thanks to me.  Now it was back down for more pictures and arm cramping but only after I waited another 45 minutes.  Now lets keep in mind that I didn't eat at all, well I had 8oz of almond milk before I left the house.  All I had with me  for reading material was the last two issues of Gourmet magazine, which I had not read yet.  So I'm starving and reading Gourmet, when one white coat sticks his head in the waiting room to say "about 20 minutes and we'll have you back on the table".  All in all a very enjoyable Friday.  So I went home and to cheer myself up, I bought a nice bottle of wine ($20 bucks that a lot for me I'm cheap...but I deserved it dam it) and it was about 4:00 p.m. when I started making Beef Bourguignon.   This is one of those dished I have wanted to make for awhile.  I followed a recipe from Simply Recipes.   I need to check it against a Julia Child to see what the difference is if any.  You start by rendering down salt pork till the fat is out and your left with crisp little brown things.  Then you brown the meat on both side, not over crowding the pan (which I did because I was impatient.)  Anyhoo....it took me until close to 8:00 p.m. to finish it and the meat was not tender.  Joe and I don't eat a lot of red meat (unless he is in CA with my brother and sister in law then he lives at In and Out Burger for the entire vacation) so not knowing beef cuts as well as I should I asked the butcher at the supermarket. (Dam meat man told me it would be tender.)  However the sauce was unbelievable, Joe and my sister loved it.  I say an entire bottle of Pinot Noir, a half cup of brandy and the liquid of rehydrated porcini mushrooms..... hello.....how could it be bad.  So after we had a little beef my sister and I cracked the bottle of wine (Opolo) it was yummy.  I let the beef simmer for a few hours longer and it did get tender.  It was a lot of work but it did the trick cooking always de-stresses me and makes me happy.  If anyone is feeling stress go to Simply Recipes or check with Julia Child and try the Beef Bourguignon.

MORE SNOW...JOY... RAPTURE.....

This is the first time I have posted a video....hope it works!  You see, I thought what about those poor people who live in nice sunny warm places that never have to wake up and shovel a foot of snow.  I FEEL SO BAD FOR THEM.  It's so much fun, first you have to be able to get your front door open, I had trouble with that today.  Then you give yourself tons of muscle strain hurling shovels full of white cement on top of already 6 foot high walls of the cement.  Your face is freezing but the rest of you is sweating from the layers of clothes you have to wear.  I had such a wonderful time and because Joe had to work today, I got to go over and have fun at my moms as well.  This is the ride home from my mom's for those of you who are not as lucky as me.....enjoy the ride!



I wasn't aware of the radio on while I was taking the video...but I do think it's funny that John Travolta is belting out I've got chills there multiplying as I'm driving thru this crap...

Oat Soda Bread

If you have never been to 101 Cookbooks you need to check it out....it is one of my favorite sites and I go there daily for inspiration.  (Also check out Simply Recipes... WONDERFUL.... picture me saying that in my best Oprah voice.)  Anyhoo, I made this Oat Soda Bread from 101 Cookbooks and it was sooooo good.  Great flavor and Joe loved it.  The best part was it did not need to rise.  I make alot of bread in the winter and the rising is a pain in the butt.  This was such an easy bread I think it is the perfect bread for someone who has never made bread before.  Mix, plop in the pan, and 50 minutes later yum! Sausage Soup

Soup is one of my favorite things to make and I'm told I'm good at it.  This coming Sunday is the 207th Annual Business Meeting at my church and I will be making a soup lunch for those who will attend (maybe 50).  I am going to make 3 types, loaded baked potato, Italian wedding, and cream of tomato basil.  Last week I made a nice sausage soup with wild rice and tomatoes.  I started by chopping an onion small and crushing a garlic clove and cooking it a few minutes in a splash of olive oil.  Then I added one of those horribly bad for you (but tasty) sausages like Jimmy Dean and smashed it into little bits and cooked it with the onion and garlic.  


I added some chicken stock and canned cherry tomatoes and seasoned it with salt, pepper, and some fennel seeds crushed.  

Once it came back to a boil I added some wild rice and let it cook for an hour until the rice was well cooked. Ten minutes before eating add a some orzo just to add another texture and some bulk.  I added a little dried spice and some cayenne pepper which adds a nice kick.


 It's not very pretty but very tasty.

Not a good day.....


I need one of these!  Not a bottle cap with a drawing of a glass of wine, but an actual glass of wine.  My day started with a trip to the Dr.'s office for blood work, etc.  Seems the ekg was not what is should be so now I have to have an echo cardio and stress test.  As my sister say "it's good to make sure everything is ok" but still...ugh. Then I picked up a cat carrier from my mom to loan to Joe's aunt because her cat wasn't doing well and her son was going to take him to the vet tomorrow.  I picked up my trusted friend Carl Johnson ( home on xmas leave from school) and headed over to Joe's aunt.  The cat turns out was not doing well.....it was obvious.  So an appointment was made for 4 p.m. today and we took the cat.  He was in end stage renal failure (which if you have not seen before is not pretty).  Got to see poor Spud get poke and and squeezed while he cried...not fun.  Finally he was put to sleep.  Of course I cried like a baby which gave me a screaming headache.  Spud was a Maine coon cat and he was huge, he weighed over 30 lbs when he was healthy and was the size of a medium/small dog.  He was the constant companion of Joe's Uncle John till Johnny past away a few years ago, he was 100.  Joe's Aunt continued to take care of Spud.  He was 16.
  

I'll never forget the sky the day of my dad's funeral my brother Jim pointed it out to me that afternoon. The sky was every color imaginable, blue, green, purple, orange, and red.  We just stood and stared at it.  I said "looks like dad just got to heaven". I've never seen a sky like that since.  The sky was beautiful as we left the vet's office today lots of pink which you don't usually see in the dead of winter.

I need to remember that with the bad of today there was also incredible beauty.  It was nice to have Carl with me during a difficult time... he is a very sensitive and special person and a real gift to me.  Also my sister Lisa will be picking me up in a while to take me to "The Pearl" for one of those glasses of spirits.....

What to do when the world is white!

This was what I saw at 6 a.m.  I was not happy.....I don't usually get up at 6 a.m. (I sleep as long as I can, and then hit the snooze button a few times.) However this morning I heard Joe getting ready and knowing that we didn't have to go to work and it was suppose to snow all day I asked what he was doing.  He announced he was going out to knock the snow off the electric wires because it was so heavy with the snow that the wires where hanging low.  (Enter the first panic attack of the day - seriously I get very bad anxiety attacks and the thought of losing power with so much snow and low temps is a scary thing.)  Of course now I couldn't sleep...took a few shots of the O so pretty snow and then made some cream of wheat for the old guy and myself.  I tried to fall back to sleep around 9:00 but after a couple of crazy dreams I was up for the day.  Joe spent the day out snow blowing the neighborhood then he went to snow blow for my mom and sister.  I spent the day alone trapped in the house surrounded by white.


So I baked bread ... a nice olive oil bread with whole wheat and white flour.

 I love the pellet stove because of the great job it does heating the whole house,
but also for being the perfect place to let my dough rise.

While the dough was rising (3 different times) I made a large pot of Italian wedding soup.  I started by chopping 3 large ribs of celery, 1 medium onion and cook that down with a little olive oil.

Then I make tiny meatballs.  Usually I use ground turkey its healthier and for this soup I prefer the flavor.


Joe and I agree the turkey meatballs are much better in this soup....beef was all I had in the freezer and I couldn't get to the store because of 
THE WHITE!

I add chicken stock to the veggies and some dried herbs, then add the balls.  A large bag of frozen spinach is added and tiny pearl pasta.


While the soup is cooking I shaped the dough after the last rise and baked it.


The bread was great .... the soup is better with the turkey meatballs.

Back to Normal (whatever that is)!

Yesterday I spent the day taking the tree down and putting all the decorations away.  It takes so long to put them up but the house looks so pretty, all sparkle and light.  Then it takes so long to take them down and you get nothing but a big empty living room.

My sister Lisa's house!

My sister and I could not be more different in some ways.  Take fashion for example, it first struck me years ago when we had to go to a party together.  I had my standard black pants, turtleneck and blazer on with simple jewelry.  As I sat on the sidelines watching people dance (I don't dance....don't ask me) I looked out and spotted my sister she was wearing bright shocking pink and big chunky jewelry and dancing.  I'll never forget that moment.  Since then I have tried to be a little more adventurous with my fashion.  I haven't always been dull in the fashion sense, my mother will tell you how I would dress when I was in college.  I went to Mass College of Art in Boston and had to dress the part.  That was an entire life time ago....It's all I can do to not wear the turtlenecks.  Anyhoo....our style of decorating is similar in a lot of ways.  We both grew up with a great appreciation for antiques and fine things.  She has managed to get a lot of Scandinavian accents in her home (our great grandfather came to this country from Sweden.)  This year she wanted a white tree....many hours were spent in search of it.



It was very pretty.
